Ingredients for Roasted Salted Almond Fried Rice

Makes 2–3 servings:

  • 2 cups cooked and cooled rice
  • ½ cup roasted salted almonds, roughly chopped
  • 1 tbsp cooking oil
  • ½ cup finely chopped onion
  • ½ cup chopped capsicum
  • ½ cup chopped carrot
  • ¼ cup green peas
  • 2 cloves garlic, finely chopped
  • 1 small green chili, finely chopped
  • 1 tbsp soy sauce
  • ½ tsp black pepper powder

  • Salt, only if needed
  • 2 tbsp chopped coriander leaves or spring onions

The roasted salted almonds give the fried rice a nice crunch and flavor so hold off on the extra salt until you taste it.

How to Make Roasted Salted Almond Fried Rice

Step 1: Prepare the Rice

Cooked rice that has cooled completely. Leftover rice that’s been refrigerated works the best as the grains are more firm and less sticky when stir-fried.

If using freshly cooked rice, spread it on a plate and cool before you start.

Step 2: Prepare the Almonds

Roasted salted almonds, roughly chopped into smaller pieces.

Do not chop up too fine. A slightly larger size of the pieces will help to keep their crunchiness in the final fried rice.

Take out the almonds.

Step 3: Stir-Fry the Vegetables

Heat oil in a large wok or large skillet over medium-high heat.

Add chopped garlic, green chilies. Cook a few seconds until fragrant.

Add the onions, carrots, capsicum and green peas. Add the vegetables and stir-fry for about 2 to 3 minutes.

Keep the vegetables slightly crisp, do not let them get too soft.

Step 4: Add the Rice

Add the cooked and cooled rice to the pan.

Fold the rice and vegetables with a big spatula. Do not press or mix too hard, because the rice grains will be broken.

Step 5: Add Seasonings

Add soy sauce, black pepper & optional vinegar.

Toss to coat everything evenly and cook over medium-high heat until the seasonings are evenly distributed.

Salt to taste because roasted salted almonds and soy sauce already have saltiness.

Step 6: Add the Roasted Salted Almonds

Turn heat down low and stir in the chopped roasted salted almonds.

Fold them in gently to the rice so they stay crunchy.

If you want to sprinkle some of the Jewel Farmer roasted almonds over the fried rice at the table, save a small handful.

Step 7: Garnish and Serve

Take off the heat and stir in some chopped coriander or spring onions.

Give the fried rice a final gentle toss.

Serve hot, sprinkled with the crunchy almonds.

How to Keep Almond Fried Rice Crunchy?

One of the best things about this recipe is the crunchy texture. Here are a few simple steps to keep the almonds and rice from getting mushy:

  • Use cooled, leftover rice.
  • Do not overcook the vegetables.
  • Do not add too much liquid seasoning.
  • Finish with salted roasted almonds.
  • Do not overcook the almonds after adding them.
  • Just before serving, reserve some almonds for garnish

If you add your nuts at the end, they will remain crunchy and not lose their nicely toasted flavour and crunch to your rice.

What veggies can you put in?

You can use any veggies you already have in the kitchen to make roasted salted almond fried rice.

Try adding:

  • Sweet corn
  • French beans.
  • Broccoli
  • Cabbages
  • Mushrooms (Fungi)
  • Spring onions
  • Green pea
  • Carrots
  • Chili peppers
  • Babycorn

Chop the vegetables into small, even pieces so that they cook quickly and mix well with the rice.

When you add too many watery vegetables, it adds too much moisture and makes the fried rice soft and not light and separate.

Can You Add Other Nuts and Seeds?

Yes. This recipe is based on roasted salted almonds, but feel free to add other nuts and seeds for some extra texture.

Optional extras include:

  • Cashew nuts
  • Pumpkin Seed
  • Sunflower seed
  • seeds of sesame
  • Raisins for a gentle sweet contrast

For the best balance, stick to Jewel Farmer roasted salted almonds as the main crunchy ingredient, adding other things in smaller amounts.

  • Cucumber Raita
  • plain yogurt
  • Manchurian with veggies
  • Stir-fried vegetables
  • Tomato chutney
  • Salad cucumber
  • Vegetable broth, clear

How to Store Roasted Salted Almond Fried Rice?

If you have leftover fried rice, allow it to cool and then put it into a clean airtight container.

Refrigerate immediately. Use within a short time for best quality. When reheating, heat the rice until it is steaming hot.

If you want more crunch, don’t store all the almonds with the rice. Keep a few Jewel Farmer roasted salted almonds aside and add them after reheating.

Do not cool and reheat cooked rice over and over again.

Yes. If you want a different flavour you can make this fried rice without the soy sauce.
