Research in weight management is promising, but not conclusive.

A systematic review and dose-response meta-analysis of 37 randomized controlled trials was performed in 2024. Researchers observed significant reductions in:

The pooled difference in body weight was approximately 0.45 kg Waist circumference decreased by approximately 0.66 cm compared with controls.

BMI, body-fat percentage, fat-free mass, waist-to-hip ratio, visceral adipose tissue, fullness or desire to eat. However, no significant effects were observed for these. The researchers also judged the certainty of the evidence to be very low for several appetite and body-composition outcomes.

Does Roasting Produce Acrylamide? 

Acrylamide formation during almond roasting has been studied by researchers specifically.

Roasting temperatures from 129 to 182 °C were studied and the results showed that the temperature and duration of roasting affected the formation of acrylamide. When controlling the roasting temperature at or below 146°C, acrylamide levels below 200 ppb were obtained at the tested conditions, according to the researchers.

Another study found that the formation of acrylamide started when the temperature of the almond kernel exceeded about 130°C and increased with the roasting conditions.

These are studies of food processing, not evidence that ordinary consumption of roasted almonds is harmful.
